Grapes, Cranberry Salad

The combination of color, textures and flavors makes this an interesting, delicious and healthful salad. The ingredients are all fresh wholesome fruit and vegetables packed with nutrients such vitamins, calcium, fiber & magnesium amongst others. 17 grapes count as one serving of the 5 to 9 a day recommended servings of fruits and vegetables and are a good source of vitamin C.

Ensure that all fruit and vegetables are washed under running water. Soak lettuce in a dish of water with ½ tsp. of salt. This helps to remove bacteria. Use a salad spinner to remove excess water. Dabbing the ingredients on paper towels also helps to keep them dry. To clean mushrooms effectively, after running water over them, use a paper towel to remove bits of debris and then rinse again, before chopping them.

Ingredients

  • 1 cup green grapes, washed
  • ½ cup dry cranberries
  • ½ cup sliced button mushrooms
  • 2 cups washed and chopped lettuce
  • 1 cup mix of peanuts & cashew nuts
  • 2 tblsp. Italian dressing or one of your choice

Method

  • Wash all ingredients as recommended above
  • Split grapes. Keep the seeds. It adds to the crunchiness and contains a lot of goodness
  • Peel, slice, rinse and chop cucumber
  • Mix all ingredients
  • Rinse the cranberries as well. Slice mushrooms after washing
  • Mix all ingredients. To prevent it getting soggy serve the dressing as a side. Choose, either Italian or balsamin vinaigrette
