Rosa Tomatoes, Peppers & Cucumber Salad

This delicious salad was made by my sister in law, Sova Pather. The ingredients are fresh, making for a healthful yet inviting salad. The colors are bright & attractive, with the ingredients blending together very well.

Tomatoes are an excellent source of several nutrients, including anti-oxidants, that works with the body's defenses to combat heart disease and the detrimental effects of old age. Tomatoes are known for their high vitamin C content & vitamin A, B, including niacin and riboflavin, magnesium, phosphorous and calcium. Tomatoes are also a good source of chromium, folate and fiber. Lycopene,found in tomatoes is protective against a variety of cancers including prostate of course, colorectal, breast, lung, endometrial, pancreatic, bladder, cervical and skin cancers.

The Rosa tomatoes may also be known as grape tomatoes. If you cannot locate it by these names, it is the little tomatoes that is generally used in salads. Of course you may substitute this with cubed Roma tomatoes. The quantities in this recipe will serve 6 adults.

  • 1 tub Rosa Tomatoes (contains about 42 little tomatoes)
  • 1 English Cucumber, sliced & chopped
  • ¼ red onion sliced
  • 3 bell peppers, red, yellow, green, sliced & cubed
  • 3 cups lettuce leaves, washed & torn


  • Wash all ingredients separately. Drain water and dab lettuce leaves with paper towel
  • Cube, chop or slice ingredients
  • Mix together
  • Drizzle with Italian dressing on individual portions when ready to eat
