2 Step Salad

Salads do not have to be made with several ingredients. Save these for days when you do have the time to put together a mixed salad. One looks for simple ways to prepare dinner after a long day at work. This 2 step salad is an ideal way to get the family to eat salad with very little preparation time.

Kids are going to be attracted to the cute little red tomatoes. The best part is that although this is such a simple salad, these ingredients are full of nutrients. Tomatoes are high in Vitamin C and also have fair amounts of Vitamin A and B, including calcium. They are also a good source of folate, fiber and chromium.
Cucumbers contain small amounts fiber, minerals and vitamins. They are very low in kilojoules.

This salad also complements a rich dish such as macaroni and cheese or cauliflower au gratin.

  • 1 large English Cucumber
  • 3 cups little grape tomatoes


  • Wash ingredients under running water
  • Peel and slice cucumber
  • Arrange on a salad platter
  • Add tomatoes. Drizzle with balsamic vinaigrette
