Easy Strawberry Flax Seed & Cucumber Salad

The combination of berries and seeds makes for an easy to make yet, healthful & nutritious salad. You may use sunflower seeds or pumpkin seeds instead of flax seeds. Be sure to wash the strawberries. See recipe Research indicates that cucumbers are a good source of vitamin A, potassium, manganese, folate, dietary fiber and magnesium. Cucumbers contain a mineral, silica, which is necessary for many bodily functions and metabolic reactions. Some researchers have found that silica may be more important for osteoporosis than calcium, as it deposits minerals into the bones and speeds the healing of fractures.

Ingredients

  • 1 tblsp. flax seeds
  • 1 cucumber
  • 1 cup sliced strawberries
  • Balsamic Vinaigrette or Italian dressing

Method

  • Peel and slice cucumber lengthwise
  • Wash and slice strawberries
  • Place on platter with strawberries on the side. Sprinkle with flax seeds
  • Add dressing or serve on the side for individual taste
