To add variety to your salads, try spicy zucchini. Take one zucchini, wash firmly to remove any residue, cut off the tops and bottoms, scrape of any scarring, rinse, then slice in ¼" rounds. Sprinkle salt and chili powder and microwave for 3 minutes. If you prefer a crunchy version microwave for another minute with no cover.
The images here show the zucchini in the cooking stage and then added to the salad. If you don't care for the spice, do not use chili powder, try ground pepper instead. Crushed garlic adds an interesting flavor. Use any dressing of your choice to complete the salad. I also added sunflower seeds.
